Organic Produce


Below is a list of the produce that we grew during our 2008 growing season. You will see a picture and brief description of most varieties. Throughout the season our CSA members received a taste of almost every product mentioned. We were also fortunate to sell a lot of these items at the Margate Farmers Market, to local restaurants and distributors.

 

Storage Tips

 

 
Most of the chefs who are not using everything right away, take the greens and put them into a plastic container in the fridge. They place a moist towel on the bottom, add the greens, then place another moist towel on top of the greens. This way they keep the produce hydrated. You would still need to rotate the greens around every other day so that the bottom and the top layer get a little air and the are not always pressing against the moist towel. This should keep your greens longer. If you were just throwing them into your crisper they would dry out really fast! 
 
You do not need to do this for the cabbage. Just place that in the crisper and when you are ready to use it you can peal off a layer or 2 of the leaves.
 
You can keep the leeks just like the other greens. You may need to peal back a layer of leaves before use.
 
Herbs are better preserved by drying them out on your counter top and then placed into a plastic or glass jar for future use. It has been said that a dried herb has 10 times the potency of a fresh herb, so the dried herbs should be used sparingly. This way they will last for a very long time.
 
Potatoes and Onions should be stored in a cool/dark place like in some cabinets of a garage or crawl space/basement. 
 
There are many things for you to learn about keeping your produce longer, but you will need to do some research for yourself. You can also preserve your produce by canning, jarring, drying etc... You may freeze a lot of it for future use too.

Basil - Genovese, Ocimum basilicum
Italian basil known for its sweet mild flavor that is much loved in Italian cuisine. Similar to sweet basil with large leaves. Great for pesto!

Basil - Cinnamon, Ocimum basilicum var cinnamomum
Emerald green leaves have burgundy accents in veins and stem. Plant produces whorls of delicate pink flowers and can be used ornamentally as well as for culinary purposes. Distinct cinnamon aroma has traditionally been used to ward off insects. Due to its pungent flavor, best used cooked, in flower arrangements or dry for potpourri or tea.

Basil - Lemon, Ocimum basilicum var citriodorum
A narrow leaf basil native to Southeast Asia with a delightfully strong aroma and lemony flavor. Delicious with fish and in salad dressings, makes a good substitute for real lemons in citrus recipes. Flowering stalks can be added to bouquets to lend a wonderful lemon fragrance. A smaller leaf variety, reaching 15” tall.

Basil - Purple Dark Opal, Ocimum basilicum var citriodorum
Beautiful lilac flowers with deep purple leaves and stems. Excellent contrast with green basil, spectacular as a garnish, in salads or for adding to basil vinegars. Extremely uniform, all-purple Italian strain.

Beets - Chiogga
Heirloom candy-striped beet with distinct fuschia pink and white concentric rings. Named after a fishing town in Italy and brought to the US in the 1840's.

Beets - Bulls Blood
Grown primarily for striking dark red-purple leaves for salad mixes. Tender, sweet flavor. Roots are also tasty and tender when harvested early.

Beets - Detroit Dark Red
Perfectly round blood-red roots are sweet and smooth. Excellent, high-quality storage variety that has been around since 1892. Leaves are suitable for salad or braising too.

An excellent choice for baby beets as well as main season production. Tops are erect, bright green & remain spotless due to multiple disease tolerances.

Golden orange roots are sweetest when young. Roots can be pickled, grilled or used in salads. Light green tops can be used as cooked greens. Beautiful addition to any dish. <Back to top>

Broccoli -DeCiccio
A reliable, multi-cut variety producing a compact 3-4” bluish-green central head followed by a prolific set of side spears. Its variable maturity results in a long harvest period for both central heads and side spears. Slotted for spring or fall production.

Broccoli - Fiesta F1 Hybrid Brassica oleracea var italica
Impressive all-season variety. Produces medium domed heads with medium-small beads, larger than Belstar. Consistent yields and highly uniform quality. Ideal for dense plantings and single cuts with a harvest span less than one week. Thick stems work well for short-stemmed crown cuts or florets. Well adapted variety demonstrates excellent tolerance to both heat and cold but performs best in hot days and cool nights.

Broccoli - Belstar F1 Hybrid
Brassica oleracea var italica Superbly adaptable, compact plant performs well all season long with tight, even buds, small to medium beads, a dome shaped head, and thick stalks. Heads span 6 - 8” inches wide and average 1.6 lbs. Ideal for short-stemmed crown cuts, florets, with incredible, large side shoots for second cuttings.

Broccoli - Rosalind
Brassica oleracea var italica By far the best OP purple headed broccoli. We produced our own seed of Rosalind and rescued it from extinction from the seed trade. It’s striking color and 4-6” heads with medium beads, make it an excellent choice for specialty markets. Early maturing variety that does best in cool conditions and good fertility. Purple color fades to green when cooked.

Cabbage - Rivera (F1)
Large, barrel-shaped, dense heads are 18" tall with broad white midribs, pale green outer leaves and creamy yellow interior. Outstanding variety with a knock-out disease package.

Cabbage - Famosa (F1)
Incredibly beautiful savoyed green cabbage. Compact heads born in the middle of widely spread dark green foliage. Plant at normal spacing for medium sized heads or close spacing for mini-heads.

Self-blanching variety with beautiful apple-green, smooth stems and good flavor. Bolt resistant and shows some tolerance to Fusarium. Plant in wet conditions or use irrigation.

Crisp, stringless green celery with tightly folded hearts, and broad, thick, well-rounded stalks. Vigorous grower. Popular tall green celery for late fall use and winter storage.

Chives - Allium schoenoprasum
This is a medium to full-size variety similar to Staro. Use leaves or lavender flowers to dress up soups and salads for a slightly spicy garnish. Also works well for freezing and drying.<Back to top>

Corn - Sugar Pearl F1 Hybrid, Zea mays
White Silvery white kernels have a sweetness equal to Silver Queen. 7.5-8” ears have full blunt tips on 6.5’ tall plants. Mid-season variety with the trademark “Tablesweet” SE-type endosperm. Tablesweet varieties are sweeter and hold sweetness longer.<Back to top>

Cilantro - Santo Cilantro, Coriandrum sativum
ANNUAL Both seed (coriander) and leaves (cilantro) are used in numerous cuisines from around the world. Often associated with Mexican dishes, this strong scented herb grows out with flat, toothed leaves for chopping into salsas and other preparations. Maintained for five generations by th Boothby family in Maine, this unique heirloom is short and plump with a creamy-yellow skin and black spines. Sweet, delicate flavor is a favorite at HMS.

Fennel - Bronze Leaf Fennel, Foeniculum vulgare (F1)
Annual- This unique culinary herb will be a hit in the garden and on the table! A non-bulbing fennel with magnificent bronze color. Feathery foliage has sweet fennel flavor and makes an eye-catching addition to any kind of salad or dressing. Grows more slowly than bulb fennels for an extended harvest window.

Fennel - Perfection
A superior bulb-type fennel from Frank Morton of Wild Garden Seeds. Larger and more uniform than the standard “Zefa Fino” type bulb fennel. Highly bolt-resistant, even from early spring transplanting.

This variety can grow 2'+ with a thick bulb tasting of mild licorice. Absolutely delicious sauteed in butter or roasted with root vegetables. Plant 6-8" apart and 0.5" deep in mid spring.

Flying Saucer (F1)
Fruits are a stunning mix of bright yellow and dark green. They are more highly ribbed than other patty pans for an "alien" look. Fruits are dense, nutty, and flavorful.

Hakurei (F1)
This white "salad turnip" sets the standard for flavor. The flat-round, smooth white roots mature early, just after radishes, and are best harvested young, up to 2" diam. The flavor is great raw - sweet and fruity - and the texture is crisp and tender. The dark green hairless tops are useful raw or lightly cooked with the roots. Compared with other early white turnips, Hakurei tastes better and stays smoother as it sizes.

Uniform 6” round heads are early and hold well in the field. Early maturity, ideal size and reliability make it a sure win for every season, perfect for moderate portions. Korridor F1 - Hybrid Brassica oleracea var gongylodes
“It’s a root, it’s a tuber…no, it’s a super stem! “ says Mother Earth News. German for “cabbage turnip,” kohlrabi offers all the same health benefits as broccoli and kale. Korridor has white bulbs with dark green leaves. Interior flesh quality holds well in the spring and fall, but not recommended for summer harvest when it can be woody. Raw kohlrabi sticks are crisp, sweet and mildly tangy, or a sensational “kohl slaw” ingredient!

Summer leek with a long, slender shaft, often used as a bunching leek with scallion-like qualities. Light green leaves will grow to 18-24” to full maturity, hill to blanch. Varna, like most summer leeks, is not hardy at temps below 20°F. Makes a delicious alternative to spring onions either raw in salads or lightly cooked.

Heirloom, Superstar of the fingerlings! Yellow skinned, finger-sized tubers set the standard for fingerling flavor much loved by foodies. Classic, smooth, red-skinned bunching radish. 1949 AAS winner. Makes uniform spheres of 3/4 - 1” with crispy white flesh. Less subject to pithiness than other radishes.

Excellent long-term storage variety. Round, dense heads averaging 3-4lbs are covered with strong blue-green wrapper leaves. Tall stems keep plants off the ground. Very productive, showing vigorous, uniform growth. Matures late for fall crop and is suited to high planting densities. Holds well in field late summer into fall and early winter. Keeps color well, even after long storage into spring.

Snap Peas - Provider Phaseaolus vulgar
The standard fresh market variety for bush snap beans, Provider comes through every year with early, heavy yields of attractive, uniform beans. Plants are vigorous and productive with strong root systems, even under adverse conditions.

Gorgeous deep purple, 5” stringless pods with green interiors. Entire bean turns green when cooked.

Very early determinate bean, with a short and heavy harvest period. Pods hang in clusters around the main stem, making them easy to pick. Golden-yellow pods with green tips are round, straight, and tender. Fine flavor and ability to remain in prime condition on the plant over a long period of time. Excellent freezer.

Dark green heavily savoyed leaves with a triangular shape. Leaves are thicker than most, making them more durable when washing, and adding heft and weight to bagged spinach. Grows best in early spring and fall, and has good over-wintering cold tolerance for early spring production.

Tat Soi
Fast growing asian green, most popular in salad mixes but can also be used for cooking. Spoon shaped leaves are dark green and glossy with thin white stems. When grown as full heads, leaves form a tight rosette that sits close to the ground. Part of the Pac Choy family, Tat Soi has the same mild flavor and texture without thick stalks.<Back to top>
