CSA Newsletter (October 2010)

 

Welcome to our 2010 Winter CSA! Thank you very much for your patronage, our Winter CSA is now SOLD OUT.

 

We have a few nice fields prepared for this cool weather season and are sowing more seeds in our greenhouses every day. We have been busy setting up low tunnels (mini greenhouses) so that we can do even more product for you when the weather starts to get really cold. We are really looking forward to this new season and are very excited to bring you some of the freshest Organic Produce directly from our fields to your home!

 

Thanks to you we continue to make excellent progress building our farm. We had 4 acres in production this summer and  are adding another 2 to 3 acres to our Organic Certification for next year. Our Main Season CSA was up to 113 members this year and we look to break the 200 member mark for 2011. Our summer went really well but we still have a long way to go before we will take a rest.

 

Delivery day for the 2010 Winter CSA is Friday, for all CSA members. We deliver from Cape May, up to Brigantine, out to Hammonton, and everywhere in between. Our delivery route continues to grow each season. We have calls from interested parties as far away as New York City, but it will be a few more years before we will get there.

The Box

 

Here is a list of the items that you can expect to see in your box this week.  Some times you might get a little more than what we list in The Box. If you  have any questions on what you received, just take a look at our web site and pull up the produce page. This page has a great listing of our produce along with a picture and a description. If you are not sure what to do with a certain item, just Google a recipe for it. The internet is a wonderful recipe book!!

This week we have packed the CSA box's with some very nice product. Here is a list of the produce that you will see in your box this Friday.

Recipe of the Week

 

 

Penne with Chard, Tomatoes, and White Beans
 
 
This quick sauce packs a nutritional punch. The chard, tomatoes and beans all are high in healthful phytochemicals. 

Ingredients:

 

    • 1 lb penne pasta, uncooked
    • 1 Tbs olive oil
    • 1 medium onion, chopped
    • 3 cloves garlic, minced
    • 1 cup prepared or homemade marinara sauce
    • 2 cups canned tomatoes, undrained
    • 3 cups chard, coarsely chopped
    • 15 oz canned white beans (cannelini, navy or white kidney beans), rinsed and drained
    • 1/2 cup dry white wine, optional
    • Freshly ground black pepper, to taste
    • 1/2 cup freshly grated Parmesan cheese*
     

    Directions

    • Boil water for pasta and cook pasta for about 10 minutes, until done.
    • Heat oil in a large saucepan. Add onion and garlic and cook over medium heat for about 5 minutes, until onions are just starting to turn brown. Pour in marinara sauce and canned tomatoes and stir to combine. Add chard, white beans, wine (if desired), and pepper.
    • Drain pasta and place in a bowl. Pour sauce over pasta and top with Parmesan cheese.

     

    Swiss chard is packed with nutrients.

    Chard is a good source of Vitamins A, C. E, K, and B6, Thiamine, Folate, Phosphorus, Zinc, Dietary Fiber, Riboflavin, Calcium, Iron, Magnesium, Potassium, Copper, and Manganese.
